Text vs. Video content: Reading is much more efficient, and you can't copy and paste from a video. Written content is also more likely to be edited so that it's concise and correct. Most videos aren't rehearsed, so they're just someone rambling about a topic off the top of their head. The only time I'd prefer video is if it's a difficult theoretical concept that I want to understand, and then I'm going to seek out a professor or expert, and I'm going to look for high-quality content that's either a highly-rehearsed lecture, or a professionally-produced video with high-quality animations and figures, where a lot of rehearsal and editing went into it.

I think it depends, Youtube has shown how much we like videos, of course there is a huge audience who still makes time to read, but I would assume most of our generation fall into the audible books, YouTube or alike category. I know a lot of people who have books, but dont read them, it is more for show. I personally find reading, Now, a discipline that I like to exercise. It takes time to be still, digest, contextualize information, form an opinion on what is being presented and retain this data.
